Before bourbon became America's whiskey, Pennsylvania rye was the dominant spirit. The Monongahela tradition — named for the river valley where much of it was made — is characterized by very high rye content in the mashbill (often 80%+), which produces an intensely spicy, grain-forward spirit with little of the caramel sweetness that defines Kentucky bourbon.
