Cask finishing has become one of the most talked-about techniques in premium spirits. What Is Cask Finishing?
Cask finishing is a secondary maturation process where a fully aged spirit is moved from its primary aging barrel into a different type of cask for an additional period — typically weeks to months. The secondary cask imparts new flavor compounds from its residual contents. It's the spirits equivalent of resting a sauce in a different pan.
The Most Common Finish Types and What They Add
Sherry cask (Oloroso, PX, Amontillado): dried fruit, chocolate, raisins, nutmeg. Port cask: red fruit, berry notes, tannins. Wine cask (Bordeaux, Burgundy, Rosé): floral, fruit, lighter tannins. Rum cask: tropical fruit, vanilla, molasses sweetness. Beer cask: grain character, light malt sweetness. Cognac cask: dried fruit, floral, subtle grape.
