The Art of Agave: Blanco, Silvestre & Reposado Explained | Kilinga Bacanora Part 2 | The Liquor Connoisseur

Updated: May 24

Part 2 of the Kilinga Bacanora series moves from origin story to liquid education. Crystal and Roger explore the three core expressions — Blanco, Silvestre, and Reposado — and break down what makes each one distinct, how the Pacifica agave expresses itself differently across these styles, and what tasting Bacanora teaches you about agave spirits as a category.

Spirits Covered

  • Kilinga Bacanora Blanco — unaged, pure agave expression

  • Kilinga Bacanora Silvestre — made from wild-harvested Pacifica agave

  • Kilinga Bacanora Reposado — rested in oak, adds complexity

  • Region: Sonora, Mexico (Bacanora PDO)

  • Agave: Pacifica (Agave angustifolia)

Blanco, Silvestre & Reposado — What's the Difference?

Blanco shows you the raw spirit at its most transparent — pure Pacifica agave character with nothing to hide behind. The Silvestre expression adds a layer of terroir from the wild-harvested agave plants, which grow with less human intervention and carry more of the landscape in the liquid. The Reposado introduces oak aging, softening the edges and adding vanilla and spice while preserving the agave backbone.

Why Bacanora Is Different From Mezcal

Bacanora is often called 'Sonora's mezcal,' but that comparison undersells both spirits. Bacanora has its own protected designation of origin, its own production rules, and its own regional character. The Pacifica agave grows differently than the Espadín used in most commercial Mezcal, and the roasting traditions in Sonora produce a distinct flavor profile that's worth understanding on its own terms.

The Tasting Education

Crystal and Roger taste all three expressions side by side in this episode, walking through the nose, palate, and finish of each. If you've ever wondered what 'terroir' actually tastes like in a spirit, this episode is a masterclass. Watch with a pour in hand if you can get your hands on any of the Kilinga expressions.

🥃 Crystal & Roger's LC Recommendations

  • If you're new to agave spirits: Start with the Reposado. The oak softens the learning curve while still delivering the agave character that makes Bacanora worth exploring.

  • If you're a Mezcal drinker: Go straight to the Silvestre. The wild-harvested agave expression will feel familiar in the best way while showing you something genuinely new.

  • If you want the purest expression: Blanco is where you taste Kilinga at its most honest. No aging, no additions — just the Pacifica agave and the distiller's craft.

LC Verdict

An essential education in what Bacanora can be. Kilinga's range of expressions makes a compelling case for treating this as a serious category — not just a footnote to Mezcal.
